Red Curry Paste, Coconut Milk and Fresh Salmon...Here We Go

This dish is simple and delicious, it all comes together in no time. What I love about red curry is the combination of flavors and how well they all work together. For this dish I chose Organic salmon, Viga cilantro lime rice, baby corn, and baby zucchini from our local East End Farm. Growing up, I was not exposed to curry until my early twenties when I was a working girl in New York City, with an expense account. Over the years curry has evolved into my life through going to some delightful Thai restaurants or making it at home with a beautiful piece of salmon as shown here. I always like to finish it off with a squeeze of lime.
