The quality of the ingredients are the most important factor in this dish. The tomatoes are peeled and gently simmered to make the most sublime light, summery tomato sauce which is then finished with butter and basil. The pasta is made in house making this dish a decadent treat.
Every time I visit Scarpetta at Gurney's in Montauk, this dish is a must. The preparation is simple but the outcome is truly a treat for anyone who enjoys a beautiful bowl of pasta. The dish is the brain child of Chef Scott Conant, although he may not longer be involved with the restaurant, he has surely left his legacy with the creation of this dish.
